The Penn State Northern NJ Alumni Chapter is taking our Cooking with Kevin series to a new level thanks to board member/resident chef, Kevin Rivera. On Saturday, Sept 18th at 11AM, Kevin will be streaming live from Lot 22 at Beaver Stadium for the White Out game against Auburn. The show will feature live action of the Grill master as he prepares a tailgate feast for his fellow Nittany Lion friends and family. He will be providing tricks and techniques, while answering questions throughout the show about tailgating and his grilling secrets. This event will take place via Zoom. After a successful cooking session last month, the Penn State Northern NJ Alumni Chapter is bringing you another edition of “Cooking with Kevin”. This remote event will be taking place on Saturday, January 23rd at 10AM via Zoom. It should last about 40 minutes. Kevin will be teaching us step by step how to prepare different types of noodles. These can be a great supplement to just about any meal. This cooking segment also will be helpful for those that are vegetarians or with have dietary needs.

The PSU Northern NJ Chapter’s Send Off Picnic is always a success in part due to the efforts of a resident grill master, Kevin Rivera. Despite the heat and humidity, we can always count on Kevin helping to oversee the grill and ensure that nobody goes home hungry. We are pleased to announce that Kevin is offering to share his culinary skills with all of you in a virtual event that we call “Cooking with Kevin”! This remote event will be taking place on Saturday, December 12th at 10AM via Zoom. It should last about 40 minutes.
Kevin will be teaching us step by step how to prepare a delicious chicken stir fry dish. This dish can be modified for vegetarians or those that have dietary needs.

½ fluid ounce lime juice
ice cubes
½ cup ginger beer
1 lime wedge for garnish
Directions:Step 1
Pour vodka and lime juice into a mug; add ice cubes and ginger beer. Stir to combine.
Step 2
Drop a lime wedge into the mug for garnish.

| Generally recognized to be the greatest ecological disaster of the 20th Century, the American Chestnut Tree Blight which decimated the Appalachian region’s greatest source of food for wildlife and for livestock set loose to feed in the wild, isn’t what comes to mind for most people. As devastating as it was, it didn’t wipe the tree out entirely. Through the careful and diligent work of dedicated scientists at The American Chestnut Foundation, Penn State, the University of Vermont and the State University of NY among others, the tree may soon thrive again for future generations. On March 23rd at 7pm, join the Vermont Chapter in hosting American Chestnut Foundation coordinators Sara Fern Fitzsimmons (PSU) and Kendra Collins (UVM) when they team up to present a historical overview of why the blight was so devastating, restoration efforts so important, and now so promising and possible. Sara Fern Fitzsimmons has worked with The American Chestnut Foundation (TACF) at Penn State University since 2003, assisting chestnut growers and researchers throughout the Appalachian Mountains. Born and raised in southern West Virginia (Hinton), Sara studied Biology at Drew University in Madison, NJ. She then received a Master’s degree in forest ecology and resource management from Duke University’s Nicholas School. Sara hopes her research and professional work will facilitate long-term conservation and restoration of native tree species at risk from exotic pests and diseases. Kendra Collins, New England Regional Science Coordinator Kendra joined The American Foundation (TACF) in 2008 as Regional Science Coordinator for the New England region, which includes the ME, VT/NH, MA/RI, and CT state chapters of TACF. She received a BS degree in Environmental Conservation Science from the University of New Hampshire and an MS in Natural Resources: Forestry from the University of Vermont. Her Masters research focused on American chestnut restoration, which led her to become involved with TACF and the formation of the VT/NH chapter. Kendra worked previously with citizen scientists through New Hampshire’s Volunteer Lake Assessment Program.
